Now that I've gotten the oven working, I'd like to start using the stupid thing. Share with me, if you would, recipes for one or two of your favorite baked things (biscuits [dampers], cookies [biscuits], muffins, breads, cakes, pies, whatever). Doesn't matter how simple or complicated it is, and you can give me units in metric or imperial.

I think you've had these from when I made them:

* Pumpkin apple muffins

BATTER:

1-1/2 cups flour
1/2 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp ground ginger
1/4 tsp salt
2 eggs
2/3 cup cooked pumpkin (cooked fresh and pureed or canned)
1/3 cup sour cream
1/4 cup melted butter
1 cup cubed, unpeeled tart apple

TOPPING:

1/2 cup finely chopped pecans
1/4 cup flour
3 T sugar
2 T softened butter
1/2 tsp cinnamon

Sift together dry batter ingredients. Break eggs into a bowl and whisk in the pumpkin, sour cream, and butter. Stir in the apple, then pour into the dry ingredients and lightly fold in until just mixed. Spoon the mixture into greased muffin tins. Combine topping ingredients in a small bowl and sprinkle over muffins. Bake for 20-25 minutes at 375 F.

I just made this cake last week, and it was kind of funky in a good way -- it could make an unusual breakfast, even.

*Winemaker's grape cake

3 cups seedless grapes
4 eggs, separated
1/3 cup extra-virgin olive oil
1 cup brown sugar
1/2 teaspoon salt
1 teaspoon lemon extract
1/2 dry red wine, sherry or marsala
2 cups pastry flour
1 tsp baking powder
1 tsp minced fresh rosemary (optional)
1-2 T sugar

Preheat oven to 350 F. Butter and flour a 10 inch springform pan. Rinse grapes and leave to dry. Beat the egg whites until stiff, but not dry, and set aside. In a separate bowl, beat together the olive oil and brown sugar for 1 minute with an electric mixer. Add the salt, lemon extract and wine, and beat until smooth.

In a separate bowl, sift together the flour, baking powder and rosemary (if using) and add to the batter. Beat until smooth. Gently fold in the beaten egg whites and HALF the grapes with a rubber spatula, then pour into the prepared pan. Bake for 20 mintes, then remove from oven and arrange the OTHER half of the grapes on the top of the cake. Sprinkle sugar over everything. Bake another 40-45 minutes until top is lightly browned. Cool on a rack for 15 minutes, then remove from pan and leave to cool the rest of the way.

Ooooooh, I remember smelling the pumpkin apple muffins--I was clinging to the diet too closely, I believe to have tasted them. SILLY ME.

The Winemaker's cake sounds like sheer tasty insanity, but it will sadly have to wait till I get a hand mixer. I wonder if it can be modified into a savory recipe? It's aaaaalmost there as it is. Yum. Thank you!
